Beef Enchiladas
Only 4.75 carbs per enchilada.
1 lb. ground round
1/3 cup diced onions
1 1/2 cup of favorite shredded cheese (Cheddar and Jack are tasty!)
10 oz can Mexican sauce
12 Tortillas (Watch the Carbs)
Brown ground round and add in onions. Drain when thoroughly cooked.
Stir in 3/4 cup enchilada sauce and 1 cup cheese.
Spoon enchilada filling onto tortillas. Roll up and place seem side down in lightly greased 13x9 inch baking dish.
Pour remaining enchilada sauce over top and sprinkle with remaining 1/2 cup cheese.
Bake at 375 for 15 to 20 minutes.
