Healthy Blueberry Cheese Crepe
Ingredients:
2/3 cup 1% cottage cheese (slightly drained, mashed)
50 gm shredded low fat mozza cheese (about 1/2 cup)
1 tablespoon Splenda®
1/2 cup blueberries
1/2 oz cream cheese
3/4 large soft whole wheat tortilla
Directions:
Spread cream cheese on tortilla. Mix the cottage cheese,
mozza and fructose; blend in blueberries. Spoon onto tortilla, fold in
thirds, pinning with toothpick. Bake for 15 minutes at 350 F.
