Taco Meatballs

Less than 1 carb per meatball.

1 1/2 lb ground beef (pretty lean)
- Seasonings*
1 green onion, finley diced
2 eggs
1 clove garlic, minced
1 block sharp cheddar cheese, cut into small cubes

* Seasoning mixture:
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon basil

Preheat the oven to 425°F.
Beat eggs and mix all ingredients except the cheese.
Mold a Tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat.
Place on cookie sheet, sprayed with PAM or non-stick spray, and bake at 425°F for 7 - 10 minutes or until meat is done and cheese has melted.
